With a height around seven feet tall, a bright white flower head and leaves around two-feet wide cow parsnip is easy to spot in moist habitats across Minnesota. Used by caterpillars, pollinators and songbirds, it isn’t commonly planted, but can be an attractive addition to restoration projects.
